Oyster Mushroom Noodle Soup

I like to visit the Super G (global) Mart every now and then even though it means braving a trip into the city. It is a little bit like traveling to distant parts of the world at a fraction of the cost and without actually going there. I especially like to keep up with the exotic fresh fruits and vegetables as the seasons change.

Our purchases yesterday were: oyster mushrooms, kefir lime leaves, twist peppers, small eggplants, lo mein noodles and red miso paste. At the time I had no idea all of the ingredients would end up being used in the same dish.

I sautéed the vegetables in toasted sesame oil starting with the onion, garlic and twist peppers followed by shaved carrot, kefir lime leaf, eggplant and oyster mushrooms.

After sautéing the veggies for a few minutes I poured vegetable broth into the pot and added a little red miso paste. When the soup came to a boil I slid in the lo mein noodles.

This was a very delicious soup.

  1. When I worked and things got stressful I would go to the next suburb in my lunch break. It was predominantly Vietnamese with fruit and vegetables flowing onto the footpaths and divine food. It was like an instant Asian holiday for my senses. That soup looks delicious.
