Believe me, I don’t do this very often. In my defense, I did it upon request. It should not count against me that I readily agreed to comply. Hey, we’ve been eating salads, sometimes twice a day, for the last few weeks. Besides, we spent the afternoon on our first kayak outing of the season. That has to balance out a small occasional indulgence. Si o no?
The toppings on chipotle flavored corn chips were:
- grated cheddar cheese
- cumin seeds coarsely ground with mortar and pestle
- homemade nopalitos
- home grown and pickled jalapeños
- black olives
- sweet corn kernels
A short spell in the oven turned this into a once-in-awhile indulgent Friday evening snack.
