I don’t do well eating sandwiches. The effort sooner or later ends up a disaster. Sometimes I lose control and the whole thing falls apart on the very first bite. Might as well get out the knife and fork at the outset.
Sometimes food is all about the pleasure. Meal after meal of healthful eating can jolly well step aside once in awhile for a little indulgence. I was so caught up in the indulgence part of today’s episode that I completely forgot about the spinach I had intended to include. Oh well…
There were a couple of veggie Big Franks® left in the refrigerator that needed to be eaten, so I put together a sandwich for the two of us to share. I figured fusing most of the components together in melted cheese would help the sandwich stay together better. So, I tossed together onions, dill pickle, pepperoncini and Dijon mustard with yellow cheddar and horseradish cheddar cheeses. I meant to mix in finely chopped fresh spinach but it completely slipped my mind.
I thawed some homemade pesto made with basil, pistachios, olive oil and salt (no cheese), and spread it on both halves of a 9 1/2 inch wheat sub roll.
Next I spread the cheese mixture and heated the sub rolls under the broiler.
I cut the meatless franks in half lengthwise, heated them in the microwave oven and placed them on the sandwich with a squirt of ketchup.
It was a wonderful cheesy mess…
