Garden Salad

I was cleaning out a few garden beds where plants had either been harvested or gone to seed and ran across these two Alpine King radishes. As old as I knew them to be I expected them to be woody or pithy, but they were tender and just right. I included one of them in a salad made almost entirely of produce from the garden, including most of the salad dressing.



The salad ingredients were:

  • cabbage
  • radish
  • carrots
  • cucumber
  • green onions
  • chives
  • baby yellow crookneck squash
  • parsley
  • tomatoes

The ingredients for the dressing were:

  • parsley
  • tarragon
  • chives
  • pickled pepperoncini
  • garlic
  • horseradish
  • cucumber
  • olive oil
  • white wine vinegar
  • salt

  1. I did something akin to that last week – we must be on the same channel again. The base was mostly shredded cabbage, but I added this and that to the first round, and then that and this to the second. Each time, the combination was delightful. I think before the entire bowl of cabbage had been consumed, I had made four different lunch meals for myself from the leftovers from the first iteration. Each was more delightful than the last, so there really are no limits to the ways to eat well – and be happy! ;->
