I’ve been enjoying my homemade sauerkraut one way or another almost every day. One quickly thrown together meal consisted of baked beans and veggie franks in hollowed out crusts of bread and topped with sauerkraut.
I already mentioned in my last post the chickpea sauerkraut pancakes.
On a whim, for a snack, I filled a peanut butter sandwich with sauerkraut. It was incredibly good, so it was no surprise when I learned that others have done the same. As I often say, “There is nothing new under the sun.”
This morning we had a sauerkraut omelet. There was sauerkraut mixed in with the eggs and more sauerkraut for the filling.
