Carrot & Beetroot Salad
I remember having carrot salad as a child. I would separate out the raisins and pineapple, my favorite parts, and save them for last.
This salad included: carrots, beets, pineapple, walnuts, sultana raisins and Clementine tangerines.
Banana, Hickory Nut & Maple Syrup Bread. Really good fresh out of the oven with a generous amount of butter… and a salad.
Stir-Fried Rice, Cauliflower & Sauerkraut.
This may seem a strange combination but Faye said they are three of her favorite foods in one dish: corn, veggie breakfast sausage links and egg.
Then there was the salad we had for lunch today: grapes, cucumber, red onion, ripe red jalapeños, green jalapeño, red Russian kale, spinach.
