Gotta keep chipping away at that Green Goblin pumpkin and use it up, this time with mushrooms and spinach.
Diced pumpkin, roughly chopped onion, mushrooms, fresh sage, rosemary and thyme were tossed with olive oil, kosher salt and black pepper.
These were roasted in the oven at 450ºF with convection fan for 10 or 15 minutes.
Meanwhile thinly sliced garlic was sautéed in olive oil for a minute or two and roughly chopped spinach was added into the pan.
When the spinach was wilted I added in the roasted pumpkin and mushrooms.
