Even though this dish didn’t meet every expectation it was delicious and I would do it again… the right way. This was intended to be fluffy rice with spinach and firm paneer seasoned with curry leaf, green chili and melon seed pesto. Instead I got overcooked rice and very soft paneer. There was no excuse for either mistake. Even though it was a type of rice I don’t usually use I do know how to cook rice. I cooked it too far in advance and was trying to keep it hot. In making the paneer I failed to use sufficient weight to press the cottage cheese.
