The refrigerator was suddenly inundated with leftovers. First we enjoyed them again as they were. Then it was time to change them up a bit. Leftover green beans, carrots and broccoli were added to leftover store-bought dosa batter to make savory vegetable pancakes/uttappam.
To accompany the veggie pancakes I used leftover frozen (freezer burned?) drumsticks to concoct a… well… a concoction, for not knowing what else to call it. I won’t go into detail because, although it tasted just fine it is not likely to be reproduced.
At another meal it was time to deal with some of the leftover mashed potatoes and corn. A mixture of mashed potatoes, corn, onions, homemade pickled jalepeños, goat cheese, egg, chipotle spice rub and bread crumbs was rolled into balls and cooked in an ebelskiver pan.
To speed up the process some of the mixture was cooked in a skillet as patties.
There was still dosa batter with chopped veggies leftover, so, after adding salt, cumin, coriander powder and baking powder, it too was cooked in the ebelskiver pan.
Leftover potatoes, corn and Mac & Cheese still remain, not to mention dinner rolls and horseradish cranberry sauce. Oh yeah, there is leftover turkey too, but Faye will have to take care of that.
