Taco Salad

My last post was laden with cheese, but it doesn’t have to be that way. This taco salad had no cheese and it wasn’t missed, in fact, had it been included it probably wouldn’t have been noticed anyway with all that was going on.

I took a stroll through the garden to see if anything survived the cold snap that could be included in a salad. While some of the plants will likely recover they are looking pretty sad right now. The green onions were looking good though.

The vegetable ingredients in the salad were:

  • red cabbage
  • iceberg lettuce
  • green onions
  • radish
  • jalapeño
  • cherry tomatoes
  • cilantro

The tortilla bowls were baked in the oven.

I mixed tomato powder, onion powder and garlic powder with cooked rice. The pinto beans were seasoned with cumin, chipotle powder, red chili powder, tomato powder, onion powder and garlic powder.

Faye had cilantro lime dressing on her salad. I had Catalina dressing and homemade fermented hot sauce on mine.

Don’t need any leftover beans…
