Jicama Salad

I love jicama. It is crisp like a radish, refreshingly moist and has a slightly sweet taste. I was glad to find a small jicama because the large ones seldom get finished before spoiling. There happened to be some great ingredients for a jicama salad on hand.

I soaked the peeled and cut jicama in a solution of cold water and vinegar to prevent oxidation while the other ingredients were being prepared.

Ingredients for the salad:

  • jicama
  • pomelo
  • Sweet Sapphire grapes
  • red bell pepper
  • jalapeño pepper
  • red onion
  • golden hominy
  • chickpeas
  • Romaine lettuce
  • lime wedges
  • salt and chili powder mix

Freshly squeezed lime juice and a dusting of a chili powder and salt mixture was all the dressing that was needed.

  1. There’s those grapes again – still not around here yet, but I am keeping a close eye on things. Jicama is great as a snack. When I traveled for business, I would carry a small, unpeeled one with me to snack on when I got to my destination. It was a great pick-me-up that would tide me over until real food could be found. I still get them occasionally to put in salads, but they are a pain to peel. Do you have some special method?
