Peppadew Peppers Stuffed With Egg Salad

Two boiled eggs in the fridge needed to be eaten. I made a basic egg salad with prepared yellow mustard, kosher salt, black pepper, turmeric, Spanish paprika and red pepper flakes.

As an accompaniment to the rest of the meal, I stuffed a Roma tomato with the egg salad and cut it into thick slices. The rest of the egg salad I stuffed into Peppadew peppers which were found in bulk at the olive bar in the deli section of the grocery store.

Egg salad and Peppadew peppers are an excellent match. No need to dress the egg salad up with things like mayo, pickle relish, capers etc. The marinated peppers are flavorful enough to add that zing.

The stuffed tomato could have used some of those extras in the egg salad. A tastier variety of tomato would have been an improvement too.

Peppadews are also great stuffed with guacamole, goat cheese and other things as well.
