The plan was for both of us to enjoy the same breakfast of an omelet with mushrooms, spinach and feta cheese. The sautéing of the onions and mushrooms was well underway and the spinach had already been blanched when I realized there was only one fresh egg in the house.
I went ahead and made an omelet for Faye using the fresh egg and some of the sautéd onions, mushrooms, spinach and the feta cheese.
There were a couple of boiled eggs in the fridge, which was why we were so low on fresh eggs. For my breakfast, I chopped the boiled eggs and added them to the onions, mushrooms and spinach remaining in the skillet.
I proceeded to load the contents of the skillet onto a tortilla, rolled it into a burrito and toasted it with a little oil to a golden brown.
A few drops of my red hot sauce on each bite is the way I like it.
