When I came across fresh figs and a pomelo on the same visit to the supermarket I knew they belonged together and I began envisioning this salad. Salad ingredients were:
- fermented cabbage
- candied red Serrano chiles
- fermented red onions
- feta cheese
The salad was served on a bed of torn fresh spinach.
The candied Serranos with their sweet heat were the behind the scenes star of this delicious salad. The only other ingredient I might have included if it hadn’t slipped my mind would have been a chiffonade of mint sprinkled on top, just on my own salad though since Faye doesn’t care for fresh mint.
The mint is making a nice comeback after going to seed late this summer.
