Celery can be more than just a background vegetable. While it was one of many ingredients in this rice dish, celery had a noticeable presence. The ingredients were:
- fresh ginger
- fresh turmeric
- red, yellow and orange mini sweet peppers
- precooked (converted) rice
- kosher salt
- black pepper
This was intended to be a meal for one… and, yes, I am still in paper plate mode.
The leftovers made a good filling for Anaheim and poblano peppers from the last harvest of the season. When baking stuffed peppers I like to lay them in a puddle of sauce of some kind. A search of the pantry turned up this sweet and savory sauce, no doubt purchased on a whim of curiosity.
I topped the peppers with mixture of coarsely grown almonds and cashews, breadcrumbs, nutritional yeast and kosher salt.
The mango/coconut/pepper sauce had a good bit of heat to it so it was just as well the peppers were quite mild.
