Fermented Brussels Sprouts Salad

For this salad I used raw Brussels sprouts which had fermented for 15 days in salt brine. They are super crunchy, tangy and just the right size to pop in your mouth for a healthy snack. Fermented cranberries were also included in the salad and fermented garlic was used in the avocado dressing.

 

Ingredients for the salad were:

  • thinly sliced fermented Brussels sprouts
  • sliced fermented cranberries
  • Mexican frying cheese
  • chile glazed pecans
  • red onion
  • romaine lettuce
  • sliced cucumber
  •  sliced watermelon radish

Ingredients for the avocado dressing were:

  • avocado
  • cilantro
  • Dijon mustard
  • fermented garlic
  • cucumber
  • lemon juice
  • apple cider vinegar
  • agave nectar
  • water
  • olive oil

Watermelon radish is a mild flavored Daikon radish. They looked good on the plate, but that was a lot of radish to eat in one sitting.
