Fresh Green Jujube Salad

I had never experienced fresh jujubes before, either green or ripe. I had eaten dried ripe jujubes, also known as red dates. They are very date-like in texture and flavor. Green jujubes are said to taste like apples, and indeed they do. I decided to use these in a salad.

I didn’t know if the cut fruit would oxidize and turn brown so, out of caution, I tossed the pieces in the juice of a lime.

The ingredients for the salad were:

  • fresh green jujubes
  • chopped roasted and salted pistachios
  • cucumber
  • raisins which had been soaked in hot water
  • celery
  • kosher salt

I made a dressing which consisted of avocado, Serrano chiles and cilantro blended together with the lime juice the jujubes had been tossed in and the water the raisins had been soaked in. The dressing was seasoned with salt, and the sourness of the lime juice was balanced with agave nectar.

The salad was served on a lettuce leaf and garnished with an avocado slice, chopped pistachios and a sprinkling of red pepper flakes. I also dropped in a couple spears of tindora/ivy gourd pickles.
