There are actually a couple other lactobacillus fermented items besides Brussels sprouts in this salad. The ingredients for this no mayo potato salad were:
- boiled red potatoes
- ferment-pickled Brussels sprouts
- ferment-pickled cucumber
- vinegar pickled ivy gourd / tindora
- ferment-pickled pearl onions
- red bell pepper
I didn’t salt the main ingredients because some of the items had been fermented in salt brine.
The dressing ingredients were:
- Grey Poupon mustard
- ferment-pickled garlic
- white balsamic vinegar
- fresh basil
- agave nectar
- black salt
Sweet red pepper was added for color and flavor.
…and this has nothing to do with anything, but, speaking of color, wouldn’t this have been a great color splatted right in the middle of that salad?
