You may recall the quinoa and carrots mentioned in my last post. I had cooked more than was needed for that dish and there was plenty left for a couple subsequent meals.
The next day some of the precooked quinoa and carrot was used to make a salad. Ingredients added to the precooked quinoa and carrots were:
- yellow bell pepper
- jalapeño pepper
- sweet onion (I used ferment-pickled)
- ferment-pickled cranberries
- celery leaves
For another meal the precooked quinoa was added to stir fried onion, garlic, green beans, zucchini and broccoli.
Might as well add the leftover quinoa salad too and finish it all off.
